almond butter banana muffins
1/4 cup almond butter (or nut butter of choice)
2 ripe bananas
1 egg
1 tbsp honey
3/4 cup oats
1 tsp vanilla
1/2 tsp baking soda
1 tsp cinnamon
- preheat oven to 375 degrees and spray six muffin cups with cooking spray.
- combine all ingredients in blender and blend until smooth.
- pour batter into muffin tins, evenly distributing between all six.
- bake for 12 minutes, or until toothpick comes out clean.
- allow to cool before removing from pan, store in airtight container for up to one week or freeze.
